Bánh đúc nóng là một biến thể hấp dẫn từ món bánh đúc nguội truyền thống. Xúc một miếng bánh mềm mịn được chan ngập trong hỗn hợp nước dùng, thịt cùng hành phi thơm lừng đưa lên miệng thưởng thức, bạn sẽ không ngại ngần ăn thêm cho tới khi hết sạch cả chén bánh mà vẫn thấy thòm thèm đấy!
Trộn 200gr bột gạo và 20gr bột năng. Sau đó, hòa tan hỗn hợp cùng 100ml nước vôi trong, ½ muỗng cà phê muối và 600ml nước. Để chỗ mát khoảng 1h.
Thịt nạc thăn rửa sạch, băm nhỏ. Hành tím cắt lát mỏng.
Nấm mèo ngâm nước cho nở, vớt ra cắt nhỏ. Hành lá rửa sạch, cắt nhỏ.
Cho bột vào nồi, thêm 1 muỗng canh dầu ăn, đun lửa vừa và dùng cây khuấy bột đều tay để bột không bị cháy, từ 20-25 phút, đến khi bột trở nên trong là đạt yêu cầu.
Làm hành phi: Hành tím lột vỏ, thái miếng vừa. Bắc chảo lên bếp thêm dầu phi hành tím vàng thơm.
Thịt nạc heo băm nhỏ trộn cùng nấm mèo băm nhỏ và 2 muỗng cà phê hạt nêm, ướp thịt 15 phút. Dùng chảo vừa phi hành xào chín thịt, rắc hành lá cắt nhỏ và chút tiêu bột vào đảo đều và tắt bếp.
Pha nước mắm: Pha hỗn hợp nước mắm gồm: 2 muỗng đường, 1 muỗng nước chanh, 2 muỗng nước mắm, 200ml nước sôi nguội.
Khi ăn múc bánh ra chén, rải thịt đã xào chín và hành phi lên trên, rưới nước dùng mặn ngọt ngập bánh.
