Khoai lang gọt vỏ, thái miếng dày cỡ khoảng ngón tay. Ngâm khoai vào thau nước lạnh có pha 1 chút muối, để vài phút rồi đổ khoai ra rổ xả qua nước lạnh cho sạch. Để ráo.
Đun nóng nhiều dầu ăn thì cho khoai vào chiên với lửa vừa. Khi thấy khoai vừa chín là vớt ra đĩa có lót giấy thấm dầu lau sạch dầu (chiên khoảng 5-7 phút).
120g đường và 60ml nước cho vào chảo nấu sôi với lửa vừa 2-3 phút. Sau đó cho khoai vào, thêm vani, nhẹ nhàng đảo cho tới khi đường kết tinh bám quanh lát khoai khô ráo thì tắt bếp.
