Cá hồi kho kiểu này vừa chắc thịt, vừa thơm thơm. Kho cá hồi với cà chua và nước đường tự thắng mang đến một hương vị ngọt ngào rất mới lạ mà hẳn bạn sẽ còn muốn làm đi làm lại nhiều lần đấy!
Cà chua rửa sạch rồi cắt lát. Cá hồi làm sạch, thấm khô, rắc muối lên 2 mặt cá hồi. Gừng, hành tím, tỏi làm sạch. Cắt lát mỏng hành, gừng. Đập giập tỏi. Ớt làm sạch rồi rạch bỏ hạt. Thêm đường và 2 muỗng canh nước vào 1 chảo nhỏ, đun lửa nhỏ cho đến khi có hỗn hợp sánh vàng mật ong rồi để riêng.
Chiên cá đến khi chín vàng trong một cái chảo chống dính rồi vớt ra để riêng. Xào hành tím, gừng, tỏi cho thơm, sau đó đặt lót dưới đáy nồi đất, đặt các lát cà chua lên, tiếp đó để cá hồi lên trên.
Thêm phần nước còn lại vào nồi, thêm nước mắm, sốt caramel đã làm ở bước 1 và ớt vào. Đun nhỏ lửa. Rắc thêm ít hạt tiêu nữa nhé. Bạn nêm nếm lại cho vừa ăn rồi đun thêm 20-30 phút nữa, lật cá thêm 1 2 lần cho thấm gia vị. Đun đến khi nước sánh lại thì tắt bếp.
Bạn múc cá ra ngoài và thưởng thức với cơm trắng nhé. Nếu bạn muốn chấm cùng rau sống thì lúc kho không kho cạn sệt mà chừa lại một ít nước kho để chấm kèm nhé.
